2 cups rice for sushi
4 tbsp wine vinegar
3 tbsp sugar
1 tbsp. salt
fresh salmon (or tuna or smoked eel or shrimp or whatever seafood you want)
For serving: soy sauce
Put the rice in a colander in a bowl of water. We want the rice to be rinsed and the starch eliminated. As long as the water comes out white, it means that the water had to be changed. When the water is clear, then let the rice drain in the colander for 15 minutes.
Put the rice with the water in the pot. Let stand for 15 ′. Turn on the heat, cover and wait for it to boil. Once it boils, lower the heat completely and cover it and boil it without stirring for 15 minutes.
Put the rice vinegar, sugar and salt in a saucepan and put them on the fire and stir to heat until the sugar and salt melt.
Pour the cooked hot rice into a large bowl and little by little pour the rice syrup.
Cut the vegetables cucumber sticks and avocado into slices.
We take a placemat and place it on the counter.
We rest on the nori seaweed.
Spread rice on the seaweed until almost halfway.
Place the fish and vegetables along. Put some mayonnaise. We start the wrapping. We wrap the roll.
Cut the roll in half and each half in 4. We have 8 rolls of bites.
Repeat the process for the remaining nori seaweed.
Serve with soy.
